Vinegar production

Real fruit vinegar, like the excellent sour cherry vinegar that we use for our salad seasoning, like the Viennese seasoning, needs a lot of time to become a good product.

When making sour cherry vinegar, everything begins like good food - with the excellent ingredients - in the case of vinegar, with the farmers and their sour cherry trees . In our case, these sour cherry trees are in Burgenland. After harvesting, the sour cherries are pressed and pure sour cherry juice is produced.

This sour cherry juice is the basic product from which the vinegar is made in two fermentation steps. In the first step, the vinegar is fermented with yeast to make a fruit wine. The sugar in the juice is broken down into alcohol and CO2. The finished fruit wine is then further fermented into vinegar. For this purpose, it is inoculated with a vinegar mother , which consists of a large number of different acetic acid bacteria, which then break down the alcohol into vinegar in contact with oxygen.

Vinegar is also a fermentation product that has been known for thousands of years. Hippocrates reported on the healing effects of vinegar over 2,400 years ago. For everyone who doesn't come from Austria, Bavaria and Switzerland, the Vistula is also known as sour cherry.
