Pickled fish

If you have the opportunity to purchase really fresh organic fish, you can surprise your guests with pickled fish on special occasions. A great alternative to the well-known ones like smoked salmon.

Ingredients for 4 persons:
2 organic trout or char fillets
6 tbsp Viennese spice

Salad:
125g bird's lettuce

Salad dressing:
1 tbsp Viennese seasoning
1 tbsp organic apple cider vinegar
2 tbsp organic sunflower oil
150g organic natural yogurt
1/2 pomegranate
Organic peppers

Preparation:
The fresh ones fillets together with the Viennese spice Place in a freezer bag, remove the air and place in the fridge for 45 minutes. Then slice thinly and serve with a good Organic oil and pomegranate seeds garnish.
