As part of the Organic Action Days , Austrian bloggers visited various companies to take a look behind the scenes of organic. A visitor who is scheduled to arrive at 12:00 is sure to come hungry and that's how it was. To come up with a dish that you don't get served every day, these onions were served with miso butter and mashed potatoes. A dish that truly pays homage to the wonderful onion and also impressed the guests.
ORGANIC INGREDIENTS FOR 4 PERSONS AS A MAIN DISH OR 8 PERSONS AS A SIDE DISH:
- 1 kg of onions
- 100g butter
- 100g chickpea miso
- 600ml water
- For the mashed potatoes:
- 1kg floury potatoes
- 200ml milk
- 2 tbsp Tyrolean seasoning
Peel the onions, halve them and place them cut side down on a deep baking tray. Melt the butter, mix with water and miso and pour over the onions. Put the tray in the oven at 180°C for 45 minutes and cook the onions until buttery.
To make the mashed potatoes, peel the floury potatoes, cook until soft and then mash them with milk and Tyrolean seasoning to make a hearty puree. If necessary, add a little more milk and serve hot with the onions.
