WienerWürze also has its place in Asian cuisine, whenever you want to avoid soy or if it is important to you that you know where the ingredients come from.
ORGANIC INGREDIENTS FOR 8 – 10 PIECES:
FOR THE BEIRIED CHAIN
- 1 Beiried chain from the AMA quality seal Kalbin
- short wooden skewers
- freshly ground pepper
FOR THE MARINADE:
- 10 days of sugar
- 200 ml Viennese wort
- 50 ml plum wine
- Lime leaves or lemongrass
PREPARATION :
Let the marinade ingredients simmer gently for about 1 hour and finally refine with kaffir lime leaves and (or) lemongrass, topping up with a little water if necessary. Then let it cool completely. Clean the Beiried chain and cut it into small, bite-sized pieces. Place in the cold soy marinade and chill for about 6 hours. Remove the meat, pat dry and thread onto pre-soaked wooden skewers. Season with freshly ground pepper. Now simmer the mariande in a small pot, reduce until thick and let cool. Fry the meat skewers on the charcoal grill or in a hot pan for as short a time as possible - prolonged exposure to heat would cause the sugar to become bitter. The meat does not need to be salted separately as the soy sauce contains enough salt.
By the way, this preparation method is suitable for all parts of meat that are fried pink. Depending on the weight, the marinating time changes (whole beef fillet, for example, up to 24 hours).
