Grain salad

Invite guests in the evening and have a long day of work ahead of you the next morning? The grain salad offers guests a wonderful starter and is also the ideal meal for the lunch break. This salad doesn't wilt, is healthy and fills you up.

Organic ingredients for 4 people:

  • 200g grain (e.g.: peeled oats)
  • Seasonal vegetables (carrots, peppers, cucumbers, leeks, shallots,...)
  • 100g hard cheese or smoked tofu
  • Sprouts or cress

Organic dressing:

  • 2 tbsp Viennese seasoning
  • 2 tbsp sunflower oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp mustard
  • pepper


Soak the grain in plenty of water overnight. The next day, rinse well and cook in salted water until al dente. Cut the vegetables and cheese into small cubes. For the dressing, stir all the ingredients well, mix and season to taste. Mix the grains, vegetables and cheese or tofu with the dressing and let it sit for about half an hour. Garnish with the sprouts or cress before serving.
