ORGANIC INGREDIENTS FOR 4 PEOPLE:

  • 250g ricotta
  • 2 tbsp Viennese seasoning
  • 1 lime
  • pepper
  • 2 slices of watermelon
  • Romaine lettuce
  • 2 tbsp salad seasoning
  • 1 tbsp honey
  • 1 tsp mustard
  • 2 tbsp safflower oil (or other high-quality oil)
  • Sprouts (e.g. radish sprouts, cress, ...)

PREPARATION:

Zest the lime. Then halve the lime and squeeze one lime half. Add the Viennese seasoning with the zest and juice of the lime to the ricotta and mix well. Season with pepper. Add more Viennese seasoning if desired. Chill the ricotta mixture for the time being.

Cut the watermelon into triangles (leave the peel on), 3 pieces per person

For the salad dressing, mix the salad seasoning with mustard, honey and oil. We recommend this Thistle oil from the Raab oil mill .

Wash lettuce and cut into strips.

Grill the watermelon for about 2 minutes.

Marinate the salad and serve, form dumplings from the ricotta cream with 2 spoons, sprinkle the ricotta dumplings with sprouts. Not only does it look good, it also gives you a boost of freshness and extra vitamins. Serve the watermelon while it is still lukewarm and enjoy.

This dish is ideal as a side dish, but also as a main course.
