Chicken Teriyaki is one of the classics of Japanese cuisine. Teriyaki is made up of “teri”, which means shine, and “yaku” , which is translated as grilling/stewing. Here is a recipe with the new teriyaki mixture based on zero waste principles.
INGREDIENTS FOR 4 PERSONS:
- 2 spring onions
- 3 tsp cane sugar
- 600g chicken breast fillets
- 3 cloves of garlic
- 2 small onions
- 4 tsp TERIYAKI MIXTURE
- 100 ml water
- 2 tbsp Viennese seasoning
- 1 tsp honey
- 25 ml dry sherry
- Black pepper (freshly ground)
- Roasted sesame seeds to serve
PREPARATION :
Cut the chicken fillets into strips. Peel and finely chop the ginger, garlic and onions. Mix the teriyaki mixture in cold water with Viennese seasoning and put it in a pot together with the chicken, ginger, onions, garlic, sherry, honey and freshly cracked pepper and simmer on a low level for about 25 minutes.
Meanwhile, cut the spring onions and sauté them in a pan with the cane sugar until they caramelize slightly. Then serve the chicken teriyaki together with the sesame seeds.
We recommend rice and crunchy wok vegetables as a side dish.
